PRESENTATION

The RATIONAL Culinary Competition for students and professionals is chaired by Mr. César Troisgros. Should we start cooking for tomorrow?

For the first time ever, RATIONAL organizes a totally innovative culinary competition!

Chef César Troisgros of the three-star restaurant "Le Bois sans Feuilles" in Ouches participated actively in the setting up of this competition and agreed to sponsor this first edition.

This competition is the result of several meetings between Mr. Troisgros and the Marketing teams of RATIONAL France, focusing on the promotion of well-being, health and the environment, and the promotion of young cooks.

The aim of  "Cooking for tomorrow" (Cuisinons pour demain) is to get young chefs from hotel schools to compete around a theme centred on plants. Jean-Baptiste François, Marketing Director of RATIONAL France says: "Sustainable development is very important for RATIONAL, to ensure that our customers have a reasoned ecological fingerprint. The "Cooking for tomorrow" competition projects us into the future: it promotes well-being and innovation, and showcases young chefs who will be the chefs of tomorrow.

Registrations will be made on the basis of a two-person file, composed of a student accompanied by a candidate of his or her choice: a student, a teacher, a chef or a cook. Registrations are open until 15 September 2020, while participation files must be submitted before 30 September 2020.

The course of the competition

Contestants will have to present a recipe, using the products from the basket composed by Mr. César Troisgros: squash (variety of your choice), buckwheat, parsley (variety of your choice) and a protein of your choice. They will have to use almost all of the vegetables chosen and a protein of their choice, such as a condiment. The flavouring ingredients will be free and at the candidates' choice.

César Troisgros says: "Nature is our main resource, take care of it and cook in a virtuous way for tomorrow".

The 5 pairs selected on the file will compete in the grand final at the EquipHotel show on November 17, 2020 at 4 pm. The winner of the competition will be chosen by an exceptional jury of 5 people, including Mr César Troisgros and a RATIONAL chef.

LE JURY

The Jury will be composed of Chef César Troisgros, 1 RATIONAL Chef and 3 persons chosen by César Troisgros.
